About Coffee from Mexico

Alma de Chiapas unites nearly 600 farmers committed to organic and Fairtrade practices. Beyond exceptional coffee, this cooperative empowers growers through training and financial support. The result is a cup that’s smooth, balanced, and deeply connected to the land and its people.

Roasting Schedule

All coffees are roasted in small batches and shipped direct from our roasting facility. We roast Monday through Friday and coffee usually ships within within 1~2 days of roasting.

Whole beans or ground?

We will grind your coffee bean order according to your preference. Generally whole beans remain fresher longer as compared to ground beans. If you do not own a coffee grinder, select the grind level based on the following recommendations:

Course grind: recommended for pour-over and french-press brewing methods.

Drip grind: recommended for perculators or when using refillable single-serve-pods.

Fine grind: recommended for espresso brew methods.

Packaging

Except for packaging exceeding 1 lb in weight, our coffee is packaged in compostable packaging. Do remove the label and tin straps (if any) before disposal.

Specialty Grade Coffee

"Small-batched roasted. Never rushed."

All our coffees are considered Specialty Grade coffee, which means the coffee we sell to you consistently scores 80 or higher on a 100-point scale established by the Specialty Coffee Association (SCA).


And in order to ensure you get your coffee when its optimally ready to brew, our coffees are roasted in small batches, carefully crafted with simplicity for your enjoyment.
